I also cut through the large leg ...I use a bandsaw. I also cut through the large leg bones, and I cut ribs into manageable sizes. Mostly I cut to be used in pho. The meat close to the bone is the most desirable meat, that particular meat you are cutting in the photo is called kah lai in Laotian, and costs lots at the market. I like the muscle when cut off the bone and sliced very thin across the grain, then tossed on top of the hot pho broth to cook just slightly. One thing with the bandsaw is I go slowly, the meat can get caught up in the saw and jamb if I go too fast. Hope you both are having a good fall in NE.
