Alligator and Shrimp Jambalaya
A classic Louisiana rice and meat dish, jambalaya combines the goodness of seafood, andouille sausage, chicken and shrimp.
For a wild game alternative, alligator makes a great substitute for chicken, which after some simmering, the alligator becomes tender and the texture is similar to pork. Adjust the heat to your liking, use more or less cayenne pepper. You can also add in chopped jalapeno if you like an extra kick.
